- 1/2 cup warm water
- 2 Tbsp yeast
- 1 Tbsp sugar
- 5 cups hot water
- 2/3 cup honey
- 2/3 cup oil
- 2 Tbsp salt
- 9 1/2 cups whole wheat flour hard white wheat
- 5 cups white flour (about)
Combine in small bowl and let stand: 1/2 cup warm water, yeast, and 1 Tbsp. sugar.
In a large bowl or bread mixer combine 5 cups hot water, honey, oil, salt, and 6 cups of wheat flour.
Add yeast mixture and 3 1/2 more cups wheat flour. Continue adding white flour (4-5 cups until dough leaves the sides of the bowl. Knead until smooth and elastic about 8-10 min. Let sit (covered with a cloth for about 10 min. Shape into loaves. Cover with cloth and rise until double (about 1 hour). Bake at 350 for 30 min. Makes 4 large loaves (plus enough dough for a small loaf or some scones)
Note: Hard white or golden wheat works the BEST for bread. You can use 50-100% wheat flour when using this kind of wheat. I usually use about 9 1/2 of wheat flour and about 4 1/2 white.
