- 1 cup evaporated milk plus 2 tbsp.
- 4 1/2 cups warm water
- 3 Tbsp yeast
- 3/4 cup sugar
- 3/4 cup oil
- 15 cups white flour (about)
- 2 1/4 Tbsp salt
Combine in a large mixing bowl and let stand: warm water, yeast, sugar, and oil.
Add about 5 cups flour before adding salt. Then continue adding flour until dough leaves the sides of mixer and you can see the bottom of the bowl. Let the machine knead for about 6-8 min. Remove dough hooks and let sit 10 min. Then shape into loaves, cover with cloth and rise until double (about 1 hour) before baking. Bake at 350 degrees for 30 min. (375 for 15 min. when shaped into rolls)
Makes 4 large or 6 medium loaves or about 72 rolls.
