Maude Odd's Refrigerator Rolls
Servings: 4 dozen
  • 1/2 cup warm water
  • 2 Tbsp yeast
  • 1/2 tsp sugar
  • 1 cup mashed potatoes
  • 2 eggs
  • 2/3 cup shortening
  • 1/2 cup sugar
  • 1 cup milk
  • 1/2 cup HOT water
  • 1 tsp salt
  • 8 cups flour
  1. Soften yeast in warm water with sugar sprinkled on top.  Meanwhile combine mashed potatoes and eggs.  Then add shortening and sugar.  Add softened yeast when ready.  Stir in milk, HOT water, and salt with an electric mixer.  Gradually beat in 4 cups flour until mixture is smooth.  Add remaining flour (about 4 cups) by hand.  Knead until smooth and elastic.  Cover in greased bowl and refrigerate.  Take out and roll out about 2 hours before serving time.  Bake at 400 for 15-20 min.  Make about 4 doz. dinner rolls.  Also good for sweet rolls.

  2. This recipe is great when you don't have a lot of prep time.  You can make this recipe the day before and then you just roll out, rise and bake the day you want to serve them.
