- 8 medium potatoes (baked potatoes - cooled)
- 1/4 cup butter
- 1 can cream of chicken soup
- 2 cup grated cheese
- 2 cup sour cream (1 large container)
- 1 onion
- 1/2 cup crushed corn flakes
- 3 Tbsp frozen butter for top
Dice onion and put in fry pan on med-med/high heat with a little olive oil and butter and sautéed until the onion reduces by about half and is all brown and delicious.
Put 1/4 cup butter and can of soup on stove on low heat until melted and mixed well. Remove from heat and stir in sour cream until well mixed.
Shred potatoes and put in large bowl. Add the cheese and the soup mixture and stir till mixed. (You can layer them if you want to make mixing easier)
Grease a 9x13 pan and add the potato mixture. Grate the frozen butter evenly across the top of the potato mixture. Be generous. Then sprinkle the crushed corn flakes evenly on the top.
(You can cover with plastic wrap and put in the refrigerator for later)
Place in a preheated 350 degree oven for 45 minutes. Serves 8-10
