Josh Bell (Megan Uchytil’s husband) worked at Walgreens with Jopes and made this delicious cheesecake.

Josh's Famous Cheesecake (Jopes' Coworker)

  • 3 Eggs Room Temperature
  • 3 8oz pkgs Cream Cheese Room Temperature
  • 1 Cup White Sugar
  • 1/8 Cup Brown Sugar
  • 1 Cup Heavy Whipping Cream Room Temperature
  • 1 Tbsp Vanilla
  • 2 Cups Graham Cracker Crumbs
  • 1 Cube Butter
  1. Melt the butter and mix it with the graham cracker crumbs and brown sugar. 

  2. Press it into a springform pan.

  1. In a mixer, cream the cream cheese for 2-4 minutes. 

  2. Add the white sugar and continue mixing until it is fluffy. 

  3. Add the heavy whipping cream and mix just until it is combined. 

  4. Mix in 1 egg at a time, then add vanilla and mix until smooth. 

  5. Pour over crust.

  1. Preheat oven to 350 degrees. 

  2. Wrap the bottom of the springform pan in 2 layers of aluminum foil. 

  3. Place in a water bath no higher than half way up the pan. 

  4. Bake on a low rack until the whole top is brown, 45 minutes-1 hour. 

  5. Turn off the oven and crack the door until it is cooled. 

  6. Refrigerate overnight.
