Boil whole chicken in plenty of water with about 1 tsp. onion salt and 1 tsp. celery salt for about 1 1/2 hours. Remove chicken and debone reserving the broth. Refrigerate broth overnight so that you can easily remove the hardened fat the next day. Heat broth to boiling and add chopped celery and carrots (add more if desired). Add thyme, salt & pepper. Make homemade noodles and slide into hot soup. Add chicken pieces and frozen peas.
Mix and roll out VERY thin. Cut with pizza cutter and slide into hot soup.
