Aunt Cary's Clam Chowder

Ingredients
- 3/4 cup butter
- 3/4 cup flour
- 5 Tbsp onions, minced
- 1/2 tsp pepper
- 3 tsp salt (or less)
- 6 cups half & half
- 2 cups potatoes, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 4 cans clams
- 1/2 cup water
Instructions

Make a medium white sauce from first 6 ingredients by melting butter over medium heat and sautéing onions. Add flour and seasonings then half and half. It should thicken as it cooks. Meanwhile cook vegetables and clams in the water for 5-10 min. (until tender). Combine and serve.
