Jean Jensen’s Pumpkin Bread

Ingredients
- 3 cups pumpkin (not pie filling)
- 1 cup water
- 6 eggs
- 1 1/2 cups oil
- 4 1/2 cups sugar
- 1 1/2 tsp nutmeg
- 2 tsp cinnamon
- 2 tsp salt
- 3 tsp baking soda
- 4 cups flour
Frosting:
- 4 oz cream cheese
- 4 Tbsp butter /margarine
- 1 lb. box powdered sugar
- Whipping cream or canned milk (add 1 Tbsp. at a time)
- 1/2 tsp lemon extract
- 1/2 tsp vanilla
Instructions

Preheat oven to 350. Mix in order given. Pour into greased and floured loaf pans filled about 2/3 full (I use our 2 small ones, there are smaller ones which would make more loaves). Bake for 45-50 minutes. Cool in pans for 10 min. Turn out of pans and cool completely. Frost and then sprinkle with tiny chocolate chips.
