We found this recipe in the April 2017 Friend issue. We tried it out for family night treats and loved them!
Yummy hollow rolls.
- 1 Tbsp yeast
- 1/4 cup warm water
- 1 egg beaten
- 1 tsp salt
- 1/4 cup sugar
- 1/4 cup oil
- 3/4 cup warm milk
- 3 1/2 cup flour possibly less
- 25 large marshmallows
- 1/2 cup butter melted
- 1/2 cup cinnamon sugar

Put yeast in warm water and set it aside. In a large bowl, mix the egg, salt, sugar, oil, and milk. Stir in flour until a soft dough forms. We stopped at about 3 1/4 cups. Lightly knead the dough.

Roll the dough out 1/2 inch think and cut into squares (about 25). Dip marshmallows into butter, then cinnamon sugar, and then place them on their own square.

Stretch the dough around the marshmallow and pinch the edges well to seal. Dip the top of the dough in butter, then cinnamon sugar. Place pinched-side down on a greased pan (probably need 2 pans).

Cover with plastic wrap and let rise at least 2 hours, until double in size.

Bake at 350˚F for 15-20 minutes or until light brown. Eat while warm and enjoy!
