Becca requested this for her birthday meal today. Time to finally type this one in. It’s a keeper!!!
- 1 lb chicken breast cubed
- salt
- pepper
- bread crumbs
- oil
- 1 tbsp sesame oil
- 2 garlic cloves minced
- 1 tsp fresh ginger grated
- 1/2 cup water (or chicken broth)
- 1/3 cup soy sauce
- 1/3 cup honey
- 1/4 cup vinegar
- 1/4 cup brown sugar
- 2 tbsp cornstarch
- 2 tbsp water
- sesame seeds
- green onions (optional)

Preheat oven to 350 degrees.

Cut chicken breast or tenders into bite-sized pieces, place in a large bowl, and salt and pepper to taste.

Coat seasoned chicken with bread crumbs and place on a cookie sheet lined with parchment paper.

Drizzle with oil and bake at 350 for 25-30 minutes until cooked through and golden.

Measure sesame oil, minced garlic, grated diner, water (or chicken broth), soy sauce, honey, vinegar, brown sugar in a medium sauce pan. Mix the cornstarch and water together and add to the sauce.

Bring sauce to a boil, stirring occasionally, and then let simmer to thicken.

Pour over baked chicken.

Sprinkle sesame seeds (and green onions, if desired) over chicken. Serve with rice and stir fry veggies.
We've used 1 1/2 - 2 lb of chicken (as much as we could fit on a sheet cake pan). The recipe makes plenty of sauce.
