Marilee's Banana Bread
Servings: 2 small loaves
Ingredients
- 1 cup sugar
- 1/2 cup shortening
- 2 eggs
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups flour
- 1 1/4 cups mashed bananas (abt. 2 large or 3 medium)
Instructions

In a large mixing bowl, cream together sugar and shortening.

Add eggs and mix well.

Sift soda, salt and flour together, and combine with mixture.

Mash, measure, and stir in bananas.

Grease and flour two small loaf pans (or 3 mini ones), and pour batter into them (fill pans a little over half full for best results).

Bake at 350°F for 40 min (check at 35 min). When toothpick poked in center comes out clean, remove from oven.

Allow bread to cool in pans for at least 10 min., then turn out and cool on racks.
