Brigadeiro

Ingredients
  • 4 Tbsp butter
  • 1 can sweetened condensed milk
  • 4-6 Tbsp cocoa powder
  • chocolate sprinkles, nonpareils, crushed graham crackers or pretzels, coconut, etc. for coating
Instructions
  1. Put butter in medium sauce pan and begin melting over medium heat. Add the sweetened condensed milk and chocolate and stir to combine. Cook, stirring continuously to keep from burning, until smooth and thickened (about 10 min). A way to know if it is thick enough, is to run your wooden spoon (or spatula) through the middle of the mixture. If it takes a while for the mixture to move back, then your brigadeiro is ready. Remove from heat and allow it to cool to room temperature (about 20-30 min).

  2. While you're waiting, you can set up your station for the next part. Place a sheet of wax or parchment paper on your work surface. Melt a little butter in a bowl (for rubbing on your hands to keep from getting sticky). Decide which coating(s) you want and put in the bottom of a plate or bowl. Have a 1/2 Tbsp (1.5 tsp) measuring spoon or other small spoon handy for scooping.

  3. When the mixture is cool enough to handle, use your spoon to scoop out a heaping 1/2 Tbsp into your buttered hands.

  4. Roll the mixture into a ball.

  5. Roll the ball in the coating (sprinkles, crumbs, etc.).

  6. Place on wax or parchment paper to set.

  7. Serve immediately if you want.
