- 4-6 cod fillets
- 2 cups flour
- 1 1/2 tsp baking powder
- 7 Tbsp milk
- 1/2 Tbsp olive oil
- 1 Tbsp water
- 6 Tbsp soda water
- salt and pepper
- vegetable oil for frying

Heat oil to 350 degrees.

If making chips, cut potatoes, rinse, and pat as dry as possible. Bake at 300 degrees for about 8 minutes. Set aside to be fried after the fish.

If using frozen fish, defrost it. Check over for bones. If there are thick and thin parts, cut the thin parts off to cook separately. Pat dry.

In a shallow dish, mix 1 cup of flour with salt and pepper and then cover the fish with the flour. Shake off any loose flour and set aside.

To make the batter take a whisk and mix the remaining 1 cup of flour, baking powder, milk, olive oil, and water.

Add the soda water to the batter and gently mix. It should have the consistency of yogurt. If it's too thick, add a little more soda water.

Take an end of a fish, place it in the batter, and coat it well. Let excess batter drip off then gently place in the hot oil. Cook for 7-8 minutes or until crispy golden brown. If it's browning too quickly turn the temperature down. Once cooked, place on a tray in the oven to keep warm while frying the others. Repeat with the other pieces of fish.

Scoop out any bits of batter, and then place chips in the oil and cook for 3 minutes.
