This recipe will zest up your rice and makes a nice side to go with the Sweet Pork (Cafe Rio Copycat recipe) or any Mexican food dish.
- 3 cups cooked white rice (1 1/2 c. uncooked rice, 3 c. water, salt)
- 1 tsp lime zest
- 5 tsp fresh lime juice
- 2 tsp sugar
- 2 Tbsp cilantro, finely chopped

Bring 3 cups of salted water to a boil. Add rice; stir. Cover and turn to low and cook for 20 minutes. Do not lift the lid!
OR
Use a rice cooker and follow it's instructions to make 3 cups of white rice.

While rice is cooking, combine the other ingredients in a large bowl.

Add cooked rice, and toss until evenly coated.
Amounts for 1 cup rice:
1 cup cooked rice
1/3 tsp. lime zest
1/2 Tbsp. lime juice (heaping, 5/9)
1/3 Tbsp. sugar (scant, 2/9)
2/3 Tbsp. cilantro, chopped
