
Frog Eye Salad
Ingredients
- 1/2 cup tapioca pearls (or acini de pepe noodles)
- 1 8-oz can mandarin oranges
- 1 16-oz can fruit cocktail
- 1 8-oz can crushed pineapple
- 1 pack vanilla instant pudding mix
- 3/4 cup milk (or almond milk)
- 8 oz cool whip
- 2 cups mini marshmallows
- 1/3 cup shredded coconut (optional)
Instructions

Boil tapioca pearls in water until translucent. Rinse with cold water until cool.

Drain fruit juice into bowl. Using 1 cup of the juice, mix half of pudding mix with it.

Mix milk and rest of pudding mix into a separate bowl.

Once both pudding mixtures are well combined, they can be combined together with the cool whip.

Mix in fruit, marshmallows, and cool tapioca pearls.

Refrigerate and enjoy!
