Frog Eye Salad
Ingredients
  • 1/2 cup tapioca pearls (or acini de pepe noodles)
  • 1 8-oz can mandarin oranges
  • 1 16-oz can fruit cocktail
  • 1 8-oz can crushed pineapple
  • 1 pack vanilla instant pudding mix
  • 3/4 cup milk (or almond milk)
  • 8 oz cool whip
  • 2 cups mini marshmallows
  • 1/3 cup shredded coconut (optional)
Instructions
  1. Boil tapioca pearls in water until translucent. Rinse with cold water until cool.

  2. Drain fruit juice into bowl. Using 1 cup of the juice, mix half of pudding mix with it.

  3. Mix milk and rest of pudding mix into a separate bowl.

  4. Once both pudding mixtures are well combined, they can be combined together with the cool whip.

  5. Mix in fruit, marshmallows, and cool tapioca pearls.

  6. Refrigerate and enjoy!
