  • 3 egg yolks (separate whites)
  • 2 cups buttermilk or sour milk (add 1 Tbsp. vinegar or lemon juice to milk to sour it)
  • 2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. taking soda
  • 1/2 tsp. salt
  • 2 Tbsp. sugar
  1. Mix well.  Beat egg whites (3) until stiff.  Fold gently into batter.  Cook on medium in an Aebleskiver pan with 1/2 tsp. butter, oil, or shortening melted in each cup of pan.  Use about 1 Tbsp. batter in each cup.  Serve with powdered sugar, jams, cinnamon sugar, etc.  You can also put a small amount in the pan, then add jam or ham & cheese, and then add a bit more batter to make a filled one.
