Jean Jensen’s Pumpkin Bread

Ingredients
  • 3 cups pumpkin (not pie filling)
  • 1 cup water
  • 6 eggs
  • 1 1/2 cups oil
  • 4 1/2 cups sugar
  • 1 1/2 tsp nutmeg
  • 2 tsp cinnamon
  • 2 tsp salt
  • 3 tsp baking soda
  • 4 cups flour
Frosting:
  • 4 oz cream cheese
  • 4 Tbsp butter /margarine
  • 1 lb. box powdered sugar
  • Whipping cream or canned milk (add 1 Tbsp. at a time)
  • 1/2 tsp lemon extract
  • 1/2 tsp vanilla
Instructions
  1. Preheat oven to 350.  Mix in order given. Pour into greased and floured loaf pans filled about 2/3 full (I use our 2 small ones, there are smaller ones which would make more loaves). Bake for 45-50 minutes. Cool in pans for 10 min. Turn out of pans and cool completely. Frost and then sprinkle with tiny chocolate chips.
