Jennifer Crites Caesar Salad
Course: Salad
  • 2 heads Romaine lettuce, chopped
  • 1 cup Chicken breast, grilled and chopped
  • 1/4 cup Parmesan cheese, shredded
Caesar Salad Dressing:
  • 2 cups mayonaise (she prefers Best Foods)
  • 1 Tbsp. lemon juice
  • 2 cloves garlic
  • 1/4 cup Parmesan cheese, shredded
Homemade Croutons:
  • 1 loaf French bread
  • 1 cube butter, melted
  • garlic salt
  1. Wash, dry and chop lettuce.  Add chicken and cheese.  Toss with dressing and croutons right before serving.  

  2. Dressing:  Make ahead.  This will make enough for at least 2 of these recipes and can be halved easily and stored in the refrigerator.

  3. Croutons:  Dice loaf and allow to sit on counter until dry.  Melt butter and toss with dried bread and garlic salt.  Spread on large cookie sheet and bake at 400 for 8-10 min. until golden brown.
