This delicious recipe comes from Jennifer Crites and is always a hit! (It is included in the breakfast category because Dan Crites fed it to Dad one morning before fishing, talk about a great day, Peach Dessert for breakfast then fishing!)

Fresh Peach Dessert
Ingredients
Fruit Layer
  • 1 3/4 c. water
  • 1 c. sugar
  • 2 Tbsp. cornstarch
  • 3 oz. pkg. orange (or apricot) jello
  • 4 c. sliced peaches
Crumb Crust
  • 1 1/4 c. graham cracker crumbs
  • 2 Tbsp. powdered sugar
  • 1/2 cube melted margarine or butter
Cream Layer
  • 11 oz. cream cheese
  • 4 Tbsp. powdered sugar
  • 12 oz. cool whip
Instructions
  1. Fruit Layer: Mix water, sugar, and cornstarch in a medium sauce pan. Boil until thick. Add jello and stir. Chill until almost set. Add sliced peaches. Set aside.

  2. Crumb Crust: Mix graham cracker cubes, powdered sugar and melted butter well. Put into a 9" x 13" pan. 

  3. Cream Layer: Cream together the cream cheese with powdered sugar. Add cool whip. Stir until smooth. 

  4. Assembly: Spread cream mixture onto the crumb crust. Add jello mixture. Refrigerate until ready to serve.

Recipe Notes

In the original recipe, the crumb crust was doubled and half of it was used to top the fruit layer. We found it was better to half it when we were counting calories! Plus the fruit layer is so pretty to see on top.
